Looking good!
The new mesh trays work perfect.
I stopped bothering with kitchen paper to dry them, as it proved unnecessary.
I also ditched the tradition of drying segments. Slices are quicker to dry and easier to get evenly dried.
There's about 6 beefsteak sized tomatos stored in this medium sized jar.
